AZ. AGR. VACCANEO CLAUDIO

Claudio Vaccaneo has been growing the hunchback cardoon for years with extraordinary results: the name comes from the fact that the cardoon is curved by the burying of the stalk during cultivation. This vegetable is a symbol of the town and characterised by a bitterish smell. It is the main ingredient of ravioli and bagna caoda.
