Cascina La Faletta

Paolo Viviani, a joyful chef and longtime acquaintance, is still capable of instantly raising the level of cuisine, and always at the right price. The first thing that wins you over are the interiors, inside a building made from tuff rock, typical of Monferrato. It dates back to 1881 and was already a wine cellar at the time. The swimming pool overlooks the valleys of Rosignano and the kitchen is open. We tasted a selection of what the menu offered and appreciated the egg, turnip and broad bean and Savoy cabbage, potatoes and gorgonzola. The first courses included the magnificent hazelnut and ricotta agnolotti or the agnolotti Monferrato-style with spiced biscuit and parmesan water; the gnocchi of potatoes and Liguria olives, ragout of rabbit and spring onion. Of the second courses, the Iberico pork fillet with orange honey and the salmon spring tataki are superb. The selection of local cheeses are also worth tasting before the Rocher of bread and Nutella and wild berries or the tiramisù with krumiri. A decidedly romantic break.
