PASTICCERIA GALLINA

Long-standing patisserie in Alessandria, as historic as its Baci di Gallina cookies, an elongated form of baci di dama with cocoa in the dough; then the Gallinotti, the amaretti and the Baciona cake, a delicious mix of hazelnut flour filled with a dark chocolate ganache. In addition to the chocolate pralines, handmade according to an ancient recipe of the grandfather, they have recently started preparing a dessert dedicated to the Citadel, namely a dark and light hazelnut cream obtained with 58% hazelnuts from the Langhe, sugar and cocoa.
