Ottavio Rube is the guide and creator of all this, as well as being an excellent winemaker and farmer. His pioneering project has found its own dimension and lends itself to family visits. The cuisine here is simple and well-made and the service is quick and essential. The prices, which are always honest, highlight the most important value, namely the meeting with a culture. At the table, with the set menu (€35) that you will have difficulty finishing, you will begin with the starter of homemade cured meats, but there will always be omelettes with seasonal vegetables, carpaccio and salads. The first course will see the agnolotti filled with stew and the barley risotto with Timorasso wine, the gnocchi with Montebore are excellent. The special meats of the second course come from grass-fed cattle according to a project of these uncontaminated valleys: roast and veal brisket cooked in the wood-fired oven, accompanied by grilled vegetables and salads from their vegetable garden. The desserts: bonet and peach and amaretti tart. If you will, follow some sound advice: the organic wines produced in the company are special and genuine. If you taste them, you will understand why.
