VALLI UNITE

This is the landscape of the Campionissimo, a.k.a. Fausto Coppi, who trained on these valleys and hilltops fuelling the myth of the Great Heron. Cooperativa Valli Unite founded in 1981 by Ottavio and Carla Rube, Cesare Berutti and Enrico Boveri was one of the first in Piedmont and has remained faithful to itself, as the prototype of an all-round project involving food, organically cultivated lands, respect for the environment, animals and the seasons as well as social commitment. Ottavio Rube is also a brilliant winemaker, a farmer and above all a dreamer who communicates little of the values he has built up over time. This makes us particularly fond of him. The hospitality remains that of a great farmhouse open to visitors who can walk around the stalls and the fields or purchase in the company store. Today, 20 members work in Valli Unite to produce wine, cured meats, meat. honey and cereals. In the restaurant, the Piedmont tradition translates with simplicity into the flavours of the territory starting with the raw salami, Slow Food presidium. The food is all based on the farm’s products, which range from the starters of cured meats, to agnolotti filled with stewed meat and roasts cooked like bread in the wood oven and then omelettes with seasonal vegetables, carpaccio and salads. The desserts: bonet, peach tart, amaretti and biscuits. All accompanied by wines (also produced by the farm): the typical and best known are Barbera, Cortese and Dolcetto, those made from local grapes like the Timorasso and Croatina and again those that we age for a year like the Montale and Piasera or for two years like the Vighèt and the Bardigà. Vegetarian menus are available on request. The majority of our cured meats do not contain lactose. The typical weekend menu costs €25 (excluding wine), €10 for children from 3 to 10 years of age. During the week, lunch starts at €10. Today, it is also possible to overnight in Valli Unite: the apartments, available all year, can accommodate from 2 to 6 people and are equipped with bathroom, kitchen and independent heating. Prices start at €60 for two people. Children up to 8 years of age are accommodated free of charge. It is possible to stay in the agri-campsite with a tent (€6/person) or with a camper and caravan (€12/team). The shop selling products that range from meat to cured meats, cheese, cereals and wine is open from Friday afternoon for the whole weekend. Fresh fruit and vegetables, many other organic and fair-trade products are also available to buy. There are also plenty of occasions to stay together, share opinions and celebrate. 25 April and the first Sunday of September have been set moments for years, which friends and customers of the cooperative never miss. An ideal place for a daytrip where you can come for a rest and a positive experience.
