Rabbit with peppers Alessandria style

Rabbit with peppers is a classic dish from Piedmont. In the Langa and Monferrato areas, there are several recipes for this dish, which vary from one area to another. Its simplicity is common whatever the recipe, just peppers with their skin, cut into strips and added to rabbit.

This old recipe, is the typical Alessandria one with the addition of anchovies, herbs and peppers that have been “charred”. It is more elaborate, but really worth trying, it is delicate and tasty.
