Spinach rissoles

“Malfatt”, a Piedmontese word which could be translated as “mis-shapes” are so called due to their irregular shape. They are popular in both the Tortona and Novara areas. They are almost identical in appearance to “Rabaton” from Fraschetta, which often results in people mistaking one for the other. The big difference, however, is that Malfatt do not contain ricotta cheese whilst Rabaton do. Furthermore, they are not baked in the oven and they are usually topped with a mushroom sauce.
